This is our loving tribute to the iconic soup dumplings of Shanghai. A challenge to prepare, which we accept willingly so we can share something truly special with you. The umami depth of these little morsels are certain to thrill.

The ideal condiment for these is black vinegar, and some match sticks of fresh ginger. A bit of Caviar is also perfect to luxe things up. Drink with orange wine, vin jaune or extremely light reds.

These can be steamed in a bamboo steamer (not supplied) or fried in a pan.
